Sundried tomato Chicken with Courgette Zoodles

Ingredients
- 2 medium courgettes/zucchini
- 2 sliced chicken breasts
- 1 tbsp coconut oil
- 1 teaspoon crushed garlic
- 1 ½ - 2 tbsp of sundried tomato pesto
- ½ cup of sliced olives
- ½/ cup of cherry tomatoes
- salt and freshly ground black pepper
- ¼ cup of water
Method
- Using a spiralizer, slice your courgettes / zucchini into noodles and set aside. Also prepare to slice the olives and cherry tomatoes.
- Heat coconut oil in a frying pan and cook the chicken for 4-6 minutes (depending on the size of chicken you cut).
- Add mushrooms & fry until mushrooms are soft. Add the salt & pepper.
- Add crushed garlic & sundried pesto, stir over heat. Add the water and stir for 2 mins.
- Add the olives and cherry tomatoes to stir fry.
- Add the courgette/zucchini noodles and heat through for 2 mins.
