Sundried tomato Chicken with Courgette Zoodles

This recipe serves 2. Cooking time: 15 minutes.

Ingredients

  • 2 medium courgettes/zucchini
  • 2 sliced chicken breasts
  • 1 tbsp coconut oil
  • 1 teaspoon crushed garlic
  • 1 ½ - 2 tbsp of sundried tomato pesto
  • ½ cup of sliced olives
  • ½/ cup of cherry tomatoes
  • salt and freshly ground black pepper
  • ¼ cup of water

Method

  1. Using a spiralizer, slice your courgettes / zucchini into noodles and set aside. Also prepare to slice the olives and cherry tomatoes.
  2. Heat coconut oil in a frying pan and cook the chicken for 4-6 minutes (depending on the size of chicken you cut).
  3. Add mushrooms & fry until mushrooms are soft. Add the salt & pepper.
  4. Add crushed garlic & sundried pesto, stir over heat. Add the water and stir for 2 mins.
  5. Add the olives and cherry tomatoes to stir fry.
  6. Add the courgette/zucchini noodles and heat through for 2 mins.
