Pina Colada cake with caramel glaze

Ingredients

- 200gram butter, softened
- ¾ cup caster sugar
- 2 tablespoon coconut or vanilla essence
- 3 eggs
- 400 - 425g can crushed pineapple, drained juice
- 2/3 cup coconut cream
- 1 1/3 cups desiccated coconut
- 1 ¼ cups self-raising flour
- 1 teaspoon baking powder
- CARAMEL GLAZE
- 300ml bottle of cream
- 1 cup soft brown sugar
- 1 ½ tablespoon liquid glucose syrup
- ½ teaspoon salt
- 1 ½ teaspoon vanilla extract
