Pina Colada cake with caramel glaze

Ingredients

  • CAKE
  • 200gram butter, softened
  • ¾ cup caster sugar
  • 2 tablespoon coconut or vanilla essence
  • 3 eggs
  • 400 - 425g can crushed pineapple, drained juice
  • 2/3 cup coconut cream
  • 1 1/3 cups desiccated coconut
  • 1 ¼ cups self-raising flour
  • 1 teaspoon baking powder
  • CARAMEL GLAZE
  • 300ml bottle of cream
  • 1 cup soft brown sugar
  • 1 ½ tablespoon liquid glucose syrup
  • ½ teaspoon salt
  • 1 ½ teaspoon vanilla extract
