Homemade Vinaigrette

Makes about 1 cup

Ingredients

  • ½ cup extra virgin olive oil
  • 2 tablespoons of lemon juice
  • ¼ cup white vinegar
  • 2 teaspoons of Dijon mustard
  • 1 teaspoon of sugar or soft honey
  • salt & pepper, to taste
  • ½ clove garlic, crushed to a paste

Method

  1. Place all ingredients in a small jar and shake to combine together.
  2. Taste and season with more salt and pepper. This dressing will keep in the fridge for up to a week. If you leave the garlic out then the dressing will last for a couple of weeks.
