Smoked Chicken, Mustard and Lemon Pie

Takes 10 mins plus 25 mins cooking time.

Serves 6

Ingredients

  • 2 sheets of flaky puff pastry
  • 2 cups of shredded or chopped smoked chicken
  • 1 cup of sour cream
  • 2 tablespoons of whole grain mustard
  • zest of 1 lemon
  • juice of half a small lemon
  • 2-3 tablespoons of fresh chopped herbs
  • Salt and pepper
  • 3 tablespoons of milk

Method

  1. Preheat the oven to 200 C.
  2. Combine the chicken, sour cream, lemon juice and zest, mustard, herbs, salt and pepper in a large bowl and mix together.
  3. Place one sheet of pastry on a greased baking sheet or tray. Pile the ingredients (filling) on top of the pastry keeping a border of 2 cm clear around the edges. Brush the border with the milk.
  4. Take the 2nd sheet of pastry and gently stretch the shape over your hands. You want this pastry to fit over the pie filling and to cover the bottom pastry.
  5. Press the edges together using a fork. Prick the top of the pie several times to let the steam escape. Decorate with left over pastry if you like. Brush with milk.
  6. Bake until the pie is golden and puffed. About 25 mins.
