“Anything goes” Frittata
Serves 4
Ingredients
- 6-8 eggs, lightly beaten
- 3 tbsp chopped fresh herbs, eg thyme, oregano, parsley
- 2 cooked potatoes,
- 1 onion thinly sliced
- 2 cups of left- over vegetables handfuls (roast pumpkin & broccoli)
- 2 tbsp parmesan or 80g of crumbled feta
- 1 teaspoon of minced garlic
- salt and pepper
- 3 tbsp olive or cooking oil
Method
- Pre heat the oven to 180 Celsius.
- Add 2 tablespoons of the oil to the pan and gently fry the onion until softened add the garlic and fry until fragrant.
- Beat the eggs in a large bowl. Add the herbs, potatoes and your chosen vegetables. Mix in the onion and garlic, cheese and salt and pepper to taste.
- Heat the remaining oil in a fry-pan with a heat-proof handle. Pour the potato mixture into the pan and bake until cooked through. (about 20 minutes)
- Allow to rest for 5 mins in the pan before turning out and serving either hot or warm.
