​​Orange and Sultana Scones

Makes 8 - 12 large scones




Ingredients

  • 3 cups of self raising flour
  • ¼ cup of sugar
  • 1 teaspoon of baking powder
  • 75g of chilled butter
  • 2 cups of sultanas or golden raisins
  • 1 ¾ cups of buttermilk or plain yoghurt
  • Zest of one orange
  • Icing sugar to dust

Method

  1. Pre-heat the oven to 200 Celsius fan bake. Line an oven tray with baking paper and lightly dust with flour.
  2. Combine the flour, sugar, baking powder and orange zest in a bowl. Add the butter and use your fingertips (or grate chilled butter) to work into the flour mixture. You want the mixture to look like breadcrumbs. Mix in the sultanas.
  3. Add the milk or yoghurt and stir with a knife until the mixture just comes together into a soft wet dough.
  4. Flatten the dough on the oven tray into a circle about 25 cm in diameter. Cut into 12 wedges and arrange with a little space between.
  5. Bake until risen, fully cooked in the middle and lightly golden, about 20 mins.
  6. Dust with icing sugar and serve with butter.
  7. VARIATIONS: Use raisins or chopped dates or a mixture of dried fruit.
