Steamed Tofu Bean Curd with Minced Pork & Prawns (courtesy of Gnoh Moey)
Serving 4-6
Ingredients
100g Raw Prawns
50g Water chestnuts
2 Spring onions
500g pork mince
1 tablespoon Sesame oil
300g Firm Tofu
½ Tomato
¼ of Red chili
2 cloves of garlic
Salt and Pepper
STOCK FOR STEAMING
1 tablespoon Soy sauce
1 tablespoon cooking wine
1 tablespoon sesame oil
1 tablespoon of oyster sauce
Half cube of chicken stock
1 tablespoon water
1 teaspoon corn flour
Method
Remove prawn tails and finely chop the prawns.
Finely chop the garlic, 1 spring onion (green part only), water chestnuts. Add the pork mince and sprinkle in the sesame oil and soy sauce. Mix well.
Cut the firm tofu into quarters and place them on the plate to go into the steamer.
Make balls of the mince mixture and place on top of the tofu pieces.
Slice tomato, spring onion and chilli and place this on top of the mince mixture. Make the broth by mixing the oyster sauce, soy sauce, sesame oil, water, salt and pepper in a bowl. Add the chicken stock and corn flour with 1 tbsp water and spoon this over the tofu stacks.
Cover the steamer with two or three tea towels to make sure the steam doesn’t escape and let this steam for about 20 minutes.
