Sausage and Bean Casserole
Serves 4
Ingredients
- Oil
- 6 Sausages of your choice
- 1 red onion diced
- 1 tsp of garlic
- Thyme
- 1 can of cannellini beans
- 1 can of red kidney beans
- 1 can of chopped tomatoes
- Chopped parsley
Method
- Dice and fry the onion with garlic and fresh thyme in a little oil.
- Cut each sausage into 3 or 4 pieces and lightly brown with the onions.
- Add the cannellini beans, red kidney beans and chopped tomatoes.
- Heat until the liquid bubbles then turn the heat down so everything just simmers. Simmer for 20 minutes.
- Serve sprinkled with chopped parsley. Serve with any bread.
