​Sausage and Bean Casserole

Serves 4

Ingredients

  • Oil
  • 6 Sausages of your choice
  • 1 red onion diced
  • 1 tsp of garlic
  • Thyme
  • 1 can of cannellini beans
  • 1 can of red kidney beans
  • 1 can of chopped tomatoes
  • Chopped parsley

Method

  1. Dice and fry the onion with garlic and fresh thyme in a little oil.
  2. Cut each sausage into 3 or 4 pieces and lightly brown with the onions.
  3. Add the cannellini beans, red kidney beans and chopped tomatoes.
  4. Heat until the liquid bubbles then turn the heat down so everything just simmers. Simmer for 20 minutes.
  5. Serve sprinkled with chopped parsley. Serve with any bread.
