​Ginger Milk Pudding

Ingredients

  • 100g of old ginger root
  • 2 tablespoons of sugar
  • 1 ½ cups of milk

Method

  1. Grate the ginger and squeeze out the juice. You can use a lemon squeezer or squeeze through muslin or sieve. Put 1 tablespoon of ginger juice in each bowl.
  2. Heat milk in a saucepan with the sugar. Stir to dissolve and continue to heat the milk until it reaches about 90 Celsius or just boiling. Take away from heat and wait for 1 minute for the temperature to drop to around 65 to 70 degree C.
  3. Slightly stir the serving bowls and then pour half the milk quickly into each serving bowl. Pour from a height of 10cm so the ginger juice can mix well with the milk.
  4. Set aside for 5 minutes and be careful not to move them. They can be served directly as a hot dessert or a cold dessert after being chilled in the fridge.
