​German Zucchini Puffer (Pancakes) (Courtesy of Barbara Peri)

Makes 8 to 10 puffer






Ingredients

  • • 1 carrot
  • 1 onion
  • 2 zucchini
  • 2 potatoes
  • ½ cup of parsley
  • 100g grated cheese
  • 3 - 4 tablespoons of self raising flour
  • 1 teaspoon of sugar
  • 2 eggs
  • Salt and pepper

Method

  1. Peel the potatoes and carrot. Grate them and the zucchini into a bowl. Using your hands, squeeze out the excess water.Add the chopped onion and parsley.
  2. Add the grated cheese, eggs, salt and pepper, sugar and flour. Mix with a spoon and then use your hands to mix well.
  3. Put the frying pan on medium to high heat. Using your hands again, take tennis ball sized mixture to form each puffer.
  4. Cook for about 2 - 5 minutes on each side until nice and brown and crispy. Serve with sour cream.
  5. VARIATION
  6. Puffer can be eaten hot or make a wonderful lunch to take to work when eaten cold.
