​Easter Simnel Cupcakes

Ingredients

  • 175g of flour
  • Pinch of salt
  • ½ teaspoon ground mixed spice
  • 175g butter
  • 175g brown sugar
  • 3 eggs, beaten
  • 350g of mixed raisins, currents and sultanas
  • 50g mixed peel
  • 500g marzipan

Method

  1. Preheat the oven to 140 Celsius. Line one 12-hole muffin tray with paper cases.
  2. Combine the flour, salt and mixed spice in a bowl.
  3. Cream the butter and sugar together until light and fluffy. Slowly beat in the eggs until well combined.
  4. Mix in the flour mixture a little at a time. Stir in the dried fruit and peel.
  5. Soften the marzipan mixture and make 12 marble sized balls.
  6. Fill each cupcake with 2 tablespoons of the cake mixture, place the marzipan ball into the centre and fill with the remaining mixture.
  7. Bake for 30 to 40 minutes, let cool in tray for 10 minutes then remove to wire racks.
  8. Roll out the remaining marzipan and cut into circles large enough to fit the top of the cupcake. Decorate with an Easter theme.
  9. VARIATIONS
  10. Use 400g of fruit cake mix. This already has peel mixed with raisins and sultanas.
