Easter Simnel Cupcakes
Makes 12
Ingredients
- 175g of flour
- Pinch of salt
- ½ teaspoon ground mixed spice
- 175g butter
- 175g brown sugar
- 3 eggs, beaten
- 350g of mixed raisins, currents and sultanas
- 50g mixed peel
- 500g marzipan
Method
- Preheat the oven to 140 Celsius. Line one 12-hole muffin tray with paper cases.
- Combine the flour, salt and mixed spice in a bowl.
- Cream the butter and sugar together until light and fluffy. Slowly beat in the eggs until well combined.
- Mix in the flour mixture a little at a time. Stir in the dried fruit and peel.
- Soften the marzipan mixture and make 12 marble sized balls.
- Fill each cupcake with 2 tablespoons of the cake mixture, place the marzipan ball into the centre and fill with the remaining mixture.
- Bake for 30 to 40 minutes, let cool in tray for 10 minutes then remove to wire racks.
- Roll out the remaining marzipan and cut into circles large enough to fit the top of the cupcake. Decorate with an Easter theme.
- VARIATIONS
- Use 400g of fruit cake mix. This already has peel mixed with raisins and sultanas.
