Chicken and Ham Gratin (Perfect recipe for using Christmas leftovers)
Serves 6
Ingredients
- 3 ½ cups of chopped cooked chicken or turkey
- 1 ½ cups of chopped cooked ham
- 1 bunch of asparagus spears
- 2 spring onions, sliced
- 420 to 500g can of chicken soup
- 1 cup of sour cream
- 1 tablespoon of Dijon mustard
- 1 cup of grated cheddar cheese
- ¾ cup of grated parmesan cheese
- 1 teaspoon of paprika
- Salt and pepper
Method
- Preheat oven to 180. Cover the base of an oven proof dish with the chicken and ham. Sprinkle the spring onions and top with half of the asparagus.
- Combine the soup, sour cream and mustard in a bowl and add salt and pepper to taste. Pour over the chopped chicken and ham.
- Arrange the rest of the asparagus spears on top and then cover it all with the 2 grated cheeses. Sprinkle with paprika.
- Bake for 30 mins until golden brown and bubbling.
- VARIATIONS
- Use any flavoured soup, corn or mushroom etc.
- Use any vegetable, mushrooms, red peppers instead of asparagus.
- Add a teaspoon of curry powder to add new flavours.
- Use drained tinned asparagus or vegetables if you can’t buy fresh.
