​Chicken and Ham Gratin (Perfect recipe for using Christmas leftovers)

Serves 6

Ingredients

  • 3 ½ cups of chopped cooked chicken or turkey
  • 1 ½ cups of chopped cooked ham
  • 1 bunch of asparagus spears
  • 2 spring onions, sliced
  • 420 to 500g can of chicken soup
  • 1 cup of sour cream
  • 1 tablespoon of Dijon mustard
  • 1 cup of grated cheddar cheese
  • ¾ cup of grated parmesan cheese
  • 1 teaspoon of paprika
  • Salt and pepper

Method

  1. Preheat oven to 180. Cover the base of an oven proof dish with the chicken and ham. Sprinkle the spring onions and top with half of the asparagus.
  2. Combine the soup, sour cream and mustard in a bowl and add salt and pepper to taste. Pour over the chopped chicken and ham.
  3. Arrange the rest of the asparagus spears on top and then cover it all with the 2 grated cheeses. Sprinkle with paprika.
  4. Bake for 30 mins until golden brown and bubbling.
  5. VARIATIONS
  6. Use any flavoured soup, corn or mushroom etc.
  7. Use any vegetable, mushrooms, red peppers instead of asparagus.
  8. Add a teaspoon of curry powder to add new flavours.
  9. Use drained tinned asparagus or vegetables if you can’t buy fresh.
