Vegetarian Nut Roast
Serves 6
Ingredients
- 2 tablespoons of butter
- 1 large onion, chopped
- 100g of mushrooms, chopped
- 2 sticks of celery, chopped
- 1 carrot, grated
- 1 capsicum, diced
- 4 eggs
- 120g of coarsely chopped nuts - any will do
- 120g bread crumbs
- 2 tablespoons of BBQ sauce
- 2 tablespoons of your favourite herbs
- Salt and pepper
- Pumpkin or sunflower seeds for the top
Method
- Pre-heat the oven to 180 degrees, line a loaf tin with baking paper.
- Gently fry the onion, celery, mushrooms, carrots and capsicum in butter until softened.
- Add the beaten eggs, chopped nuts, BBQ sauce, breadcrumbs, herbs, salt and pepper.
- Scoop the mixture into the loaf tin, pressing down. Smooth the top and decorate with the seeds.
- Place in the oven for 1 hour. If the top starts to brown cover with tin foil after 30 minutes.
