Vegetarian Nut Roast

Serves 6

Ingredients

  • 2 tablespoons of butter
  • 1 large onion, chopped
  • 100g of mushrooms, chopped
  • 2 sticks of celery, chopped
  • 1 carrot, grated
  • 1 capsicum, diced
  • 4 eggs
  • 120g of coarsely chopped nuts - any will do
  • 120g bread crumbs
  • 2 tablespoons of BBQ sauce
  • 2 tablespoons of your favourite herbs
  • Salt and pepper
  • Pumpkin or sunflower seeds for the top

Method

  1. Pre-heat the oven to 180 degrees, line a loaf tin with baking paper.
  2. Gently fry the onion, celery, mushrooms, carrots and capsicum in butter until softened.
  3. Add the beaten eggs, chopped nuts, BBQ sauce, breadcrumbs, herbs, salt and pepper.
  4. Scoop the mixture into the loaf tin, pressing down. Smooth the top and decorate with the seeds.
  5. Place in the oven for 1 hour. If the top starts to brown cover with tin foil after 30 minutes.
