Toad in the Hole

Serves 6


Ingredients

  • 1/3 cup of oil (canola or sunflower)
  • 10 to 12 of your favourite sausages
  • 450ml of milk
  • 170g of flour (1 firmly packed cup)
  • 6 eggs
  • 4 sprigs of fresh rosemary
  • Salt and pepper to taste

Method

  1. Whisk the milk, flour and eggs together with a pinch of salt and pepper. Leave to sit.
  2. Pre heat your oven to 230 Celsius. Put the oil into a baking tin, then place on the middle shelf of your oven.
  3. When the oil is very hot, add the sausages and put them back in the oven (for about 10 minutes) but please keep an eye on them and only allow them to go lightly golden.
  4. Carefully take the tin out of the oven and pour the batter around the sausages. Add the rosemary sprigs into the batter too. Put the tin back into the hot oven and do not open the door for at least 20 minutes!
  5. Serve with mashed potatoes, greens and your favourite gravy.
