Ingredients
- 100ml of warm milk
- 1 ½ tsp Surebake yeast
- 1 ½ cups of flour
- 1 egg
- 1tsp mixed spice
- 1 tsp caster sugar
- 50g softened butter
- 225g mixed dried fruit
- 100g marzipan
- 25g melted butter
- 50g icing sugar
Method
- Mix the milk and yeast and leave for 10 mins to react.
- Add egg, sifted flour, mixed spice, sugar and a pinch of salt. Mix together.
- Add the butter and dried fruit. Mix and then fold by hand. Cover the dough with a tea towel and leave to rise for 45 mins.
- Heat oven to 180 and line a baking tray with baking paper.
- Punch the air from the dough. Roll dough out to a 35cm by 12cm shape.
- Roll the marzipan into a 32cm log. Place on top of the dough and roll dough around the marzipan.
