Stollen

Ingredients

  • 100ml of warm milk
  • 1 ½ tsp Surebake yeast
  • 1 ½ cups of flour
  • 1 egg
  • 1tsp mixed spice
  • 1 tsp caster sugar
  • 50g softened butter
  • 225g mixed dried fruit
  • 100g marzipan
  • 25g melted butter
  • 50g icing sugar

Method

  1. Mix the milk and yeast and leave for 10 mins to react.
  2. Add egg, sifted flour, mixed spice, sugar and a pinch of salt. Mix together.
  3. Add the butter and dried fruit. Mix and then fold by hand. Cover the dough with a tea towel and leave to rise for 45 mins.
  4. Heat oven to 180 and line a baking tray with baking paper.
  5. Punch the air from the dough. Roll dough out to a 35cm by 12cm shape.
  6. Roll the marzipan into a 32cm log. Place on top of the dough and roll dough around the marzipan.
