Stir-Fried Choy Sum Vegetables

Serves 2


Ingredients

  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 red chilli
  • 1 tablespoon cooking wine
  • 1 teaspoon sesame oil
  • ½ cup of water
  • 2 gloves of garlic
  • 2 brown/white mushrooms or Chinese dried mushroom
  • choy sum or green vegetables
  • 1 red chili
  • any left-over meat: mince chicken, mince pork and raw prawns
  • ½ Chicken stock cube
  • salt and pepper
  • 2 teaspoons starch flour or corn flour with ½ cup water
  • 2 tablespoons olive oil

Method

  1. Chop garlic, mushrooms, vegetables and chili into pieces.
  2. In a small bowl combine the oyster sauce, soy sauce, sesame oil, stock cube, salt and pepper and cooking wine with the water.
  3. Heat the olive oil on a high heat and fry the garlic and chilli together. Add the left-over meats and stir. Add the greens and mushrooms, stirring and combining for 1 minute. Add the sauce mixture and then finally the corn starch dissolved in the water.
  4. Cover with a lid and simmer for 2 to 3 mins until tender and warm through.
