Spinach and Cauliflower Fritters

Makes 8 fritters

Ingredients

  • 1 small cauliflower, chopped into small pieces
  • 2 cups fresh spinach, chopped
  • 2 spring onions, finely chopped
  • 3 eggs, lightly beaten
  • ½ cup plain, gluten free or rice flour
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon crushed garlic
  • 1 teaspoon salt
  • black pepper
  • 2 tablespoons olive oil, for frying
  • ¼ cup Greek yoghurt

Method

  1. Boil the cauliflower in large pot for 4 minutes, until softened. Drain and mash it well but do not puree it.
  2. In a large bowl,put cauliflower, spinach, spring onion, eggs, flour, parsley, garlic, salt and pepper. Add in the mash cauliflower and mix well.
  3. Heat a dash of olive oil in a large frying pan on medium heat. Shape small handfuls of the mixture on your palm or use spoon and put onto a frying pan, flatten a little. Don’t overcrowd the pan and cook on each side for about 5 minutes or until browned all over.
  4. Serve with a side of fresh Greek yoghurt.
