Boil the cauliflower in large pot for 4 minutes, until softened. Drain and mash it well but do not puree it.
In a large bowl,put cauliflower, spinach, spring onion, eggs, flour, parsley, garlic, salt and pepper. Add in the mash cauliflower and mix well.
Heat a dash of olive oil in a large frying pan on medium heat. Shape small handfuls of the mixture on your palm or use spoon and put onto a frying pan, flatten a little. Don’t overcrowd the pan and cook on each side for about 5 minutes or until browned all over.
