Spiced Red Cabbage
Serves 6
Ingredients
- ½ red cabbage
- 1 onion sliced
- 2 teaspoons of garlic
- 1/4 teaspoons of ground cloves
- Salt and pepper
- 1 chopped apple
- ¼ teaspoon of nutmeg
- 2 tablespoons of red wine vinegar
- 1 ½ tablespoon of brown sugar
- 20g of chopped butter
Method
- Preheat the oven to 150 degrees.
- Finely slice the cabbage, removing the core and put into a large oven proof dish. Add the sliced onion and chopped apple.
- Combine the garlic, spices and vinegar in a small bowl. Pour over the cabbage and mix through.
- Dot the butter on top. Season with salt and pepper.
- Cover tightly and bake for 1 ½ hours, stirring once or twice.
- Eat as a side dish or serve on crostini with crumbled feta on top.
