Spiced Overnight Oats

Preparation time: 15 minutes plus overnight

VARIATIONS
You can use any type of milks: nut milks, coconut milk, soy milk, rice milk and any dried or fresh fruits for the topping.



Ingredients

  • ½ cup original almond milk
  • 1 tablespoon maple syrup
  • 1 ½ - 2 tablespoon smooth peanut butter
  • ½ cup rolled oats
  • 2 tablespoon sultanas or any dried fruits
  • TO SERVE
  • 1 apple, cored and chopped to small pieces
  • 1 teaspoon cinnamon
  • 1 tablespoon sultanas or any dried fruit

Method

  1. Place the almond milk, peanut butter and maple syrup in a bowl and stir to combine. Add oats, sultanas or cranberries and stir again, ensuring all oats have been coated and covered in milk.
  2. Cover well with plastic wrap and transfer to the refrigerator to soak overnight.
  3. Next morning, take-out the mixed bowl of oats from the refrigerator.
  4. In another bowl mix chopped apple pieces, cinnamon and a tablespoon of your favourite dried fruit. Stir to combine.
  5. Pour half the almond oats into serving jars then top with half the mixed apple spice and continue to layer.
  6. This recipe is very healthy and delicious. It is high in energy and a great way to start the day.
