Make 20-22 balls

Ingredients

  • 500g super wine biscuits crushed into crumbs
  • 1 tablespoon cocoa powder
  • 200g butter
  • 1/2 cup maple syrup
  • 3/4 of a 395gram tin of sweetened condensed milk
  • 1 packet marshmallows
  • 1/2 to 1 cup desiccated coconut for coating

Method

  1. Combine cocoa powder and biscuits in a bowl
  2. Put butter, maple syrup, sweetened condensed milk and vanilla essence in a saucepan. Stir over medium heat until butter is melted and mixture is smooth, do not boil. Remove heat and let it cool down
  3. Pour it over the biscuit crumb and mix it well
  4. Spoon the mixture into the palm of your hand, press down a little. Place the marshmallow on top and wrap it in the cocoa biscuit mixture, pressing and forming a ball. Keeping your hands wet will make the process easier
  5. Roll in coconut to coat it completely
  6. Cover and refrigerator until firm. Store in an airtight container in the refrigerator or freezer. May be frozen for up to 2 months
