Sprinkle salt over flour and mix. Add oil and stir.
Make a well and add hot water. Stir.
Add margarine and knead well until the dough is smooth.
Cover with a tea towel and let rest for 5 mins.
Roll into a large sausage shape and pinch 10 to 15 pieces off.
Make each piece into a disc shape and roll out using a rolling pin on a floured bench top, rotating with each roll until the roti is the size of a lunch plate.
Grease the hot frying pan with margarine and fry the roti flipping often.
