Yay Asparagus is in season, my favourite way to cook them!
Serves 4 as a side dish
Ingredients
• 2 bunches of asparagus
• 2 tablespoons of olive oil
• Zest of ½ lemon
• Salt and pepper to taste
Method
Heat the oven to 220 C fan bake.
Place the asparagus in a baking dish with all the other ingredients and turn to coat well.
Spread out in a single layer and roast until asparagus starts to shrivel. About 12 to 15 minutes.
Serve hot or cool and use in salads or fancy asparagus rolls. They will keep in the fridge for 4 to 5 days. If it is not asparagus season you can use 2 large handfuls of green beans instead.
