Roast Lamb with Herb Crust

Ingredients
- 1.3 to 1.6kg leg of lamb
- 3 teaspoons of garlic
- Zest of one lemon
- ¼ cup of finely chopped parsley
- 2 tablespoons of finely chopped rosemary
- ½ cup of breadcrumbs
- 90g butter, softened
- Salt and pepper
Method
- Preheat oven to 180. Place the leg of lamb in a roasting tin and place in the oven for 45 mins.
- To make the herb crust, place all the other ingredients in a bowl. Mix well.
- Spread the crust mixture onto the semi cooked lamb. Cook for another 45 mins, reducing the heat if the crust gets too brown.
- Rest the lamb for 10 minutes before carving thinly against the grain.

- 60 mins per kilo for medium.
- Our lamb was 1.5 kilos so we cooked it for a total of 90 minutes.
