Roast Lamb with Herb Crust

Serves 4

Ingredients

  • 1.3 to 1.6kg leg of lamb
  • 3 teaspoons of garlic
  • Zest of one lemon
  • ¼ cup of finely chopped parsley
  • 2 tablespoons of finely chopped rosemary
  • ½ cup of breadcrumbs
  • 90g butter, softened
  • Salt and pepper

Method

  1. Preheat oven to 180. Place the leg of lamb in a roasting tin and place in the oven for 45 mins.
  2. To make the herb crust, place all the other ingredients in a bowl. Mix well.
  3. Spread the crust mixture onto the semi cooked lamb. Cook for another 45 mins, reducing the heat if the crust gets too brown.
  4. Rest the lamb for 10 minutes before carving thinly against the grain.
  5. COOKING TIMES
  6. 60 mins per kilo for medium.
  7. Our lamb was 1.5 kilos so we cooked it for a total of 90 minutes.
