Roast Chicken with Chorizo and Herb Stuffing
Serves 6
Ingredients
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 70 g chorizo, finely chopped
- 2 cups breadcrumbs
- 1/4 cup chopped fresh herbs or 2 teaspoons of dried.
- 1 egg, beaten
- ½ cup of water
- 1 whole fresh chicken
- 1 cup of stock
Method
- Preheat oven to 180 Celsius.
- Mix together all the stuffing ingredients with enough of the water to make a moist mixture.
- Fill the cavity of the chicken and place the chicken into a roasting pan.
- Add the chicken stock, cover with foil and roast for 1 hour.
- Remove the foil and continue roasting for 50 mins or until juices run clear.
