Roast Chicken with Chorizo and Herb Stuffing

Serves 6

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 70 g chorizo, finely chopped
  • 2 cups breadcrumbs
  • 1/4 cup chopped fresh herbs or 2 teaspoons of dried.
  • 1 egg, beaten
  • ½ cup of water
  • 1 whole fresh chicken
  • 1 cup of stock

Method

  1. Preheat oven to 180 Celsius.
  2. Mix together all the stuffing ingredients with enough of the water to make a moist mixture.
  3. Fill the cavity of the chicken and place the chicken into a roasting pan.
  4. Add the chicken stock, cover with foil and roast for 1 hour.
  5. Remove the foil and continue roasting for 50 mins or until juices run clear.
