Quesadillas “kay-sa-dee-ya”

Serves 3

Ingredients

  • 6 flour tortillas
  • 1 tin of chopped tomatoes
  • 1 white onion, finely chopped
  • A bunch of coriander
  • Juice of 1 lime
  • 1 tin of Black Beans
  • 2 cups of grated cheese (mozzarella is the best)
  • Your favourite chilli sauce
  • ANY LEFT OVERS IN YOUR FRIDGE!
  • For the vegetarian Quesadilla add corn and mushrooms
  • Add left over roast chicken and avocado for the dinner Quesadilla
  • For the breakfast Quesadilla add bacon and egg

Method

  1. Mix the tomatoes, chopped onion, coriander and lime together in a bowl. This is your salsa.
  2. Sprinkle a little grated cheese onto the tortilla. Add spoon fills of the salsa, dotted over the tortilla.
  3. Sprinkle a ¼ of a tin of black beans on top. Add your favourite chilli sauce.
  4. NOW ITS TIME TO ADD ANY OTHER INGREDIENTS YOU LIKE
  5. Top with some more grated cheese and place the second tortilla on top.
  6. Place the sandwiched tortillas in a greased sandwich or panini press until the cheese starts to melt. Slice into wedges and serve with sour cream and extra salsa.
  7. You can also fry the tortilla in a greased frying pan, but take care when you flip it over as the ingredients can fall out.
  8. Try any flavours that you love! You can also make sweet dessert Quesadilla, peanut butter and banana!
