Ingredients

  • 1 meduim size orange pumpkin
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1 & half cups self-raising flour
  • Half teaspoon Baking powder
  • Canola oil
  • For topping:
  • 2 tablespoon brown sugar
  • 1 teaspoon ground cinnamon

Method

  1. Peel pumpkin, remove insides (pips), cut to cubes pieces.
  2. In pot pumpkin, sugar, cinnamon and 1 + half cups of water, with lid on.
  3. Let water boiling for about 30 mins.
  4. When pumpkin mashed and soft remove from heat and leave to cool.
  5. Meantime, in a bowl 2 eggs, flour, baking powder and mix well with wooden spoon.
  6. Little oil to frying pan turn it on to little hot heat, 1 tablespoon pumpkin mixture at a time in heated pan, brown evenly on both sides.
  7. Keep fritters warm.
  8. In small bowl mix toppings together then sprinkle over warm fritters.
