Make 12 – 15
Ingredients
- 1 meduim size orange pumpkin
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 2 eggs
- 1 & half cups self-raising flour
- Half teaspoon Baking powder
- Canola oil
- For topping:
- 2 tablespoon brown sugar
- 1 teaspoon ground cinnamon
Method
- Peel pumpkin, remove insides (pips), cut to cubes pieces.
- In pot pumpkin, sugar, cinnamon and 1 + half cups of water, with lid on.
- Let water boiling for about 30 mins.
- When pumpkin mashed and soft remove from heat and leave to cool.
- Meantime, in a bowl 2 eggs, flour, baking powder and mix well with wooden spoon.
- Little oil to frying pan turn it on to little hot heat, 1 tablespoon pumpkin mixture at a time in heated pan, brown evenly on both sides.
- Keep fritters warm.
- In small bowl mix toppings together then sprinkle over warm fritters.
