Pulled Pork

Serves 4 to 6

Ingredients

  • 2 to 3kg piece of pork
  • 2 tablespoons of olive oil
  • 2 teaspoons of ground cumin
  • 3 teaspoons of garlic
  • Salt and pepper
  • Juice of ½ lemon
  • 3 teaspoons of oregano
  • 3 teaspoons of white vinegar

Method

  1. Put all ingredients except the pork and vinegar in a bowl and mix together well. Cover the underside of the pork in the mix and leave in the fridge for any time between 1 hour or overnight. (the longer the better).
  2. Pre heat the oven to 240 degrees. Pierce the pork skin in lines so it will make nice crackling sizes.
  3. Paint the skin with the white vinegar. Bake for 40 mins at 240 degrees.
  4. After 40 mins turn the oven down to140 degrees and poor 2 cups of water around the pork. Leave to cook for 3 to 4 hours.
  5. Keep an eye on the water level and add more if it starts to evaporate.
  6. The pork will be soft when it is ready. Remove the crackling and put onto a serving plate. Shred the pork using 2 forks.
  7. Serve with beans in Mole sauce, tortillas and any other favourite Mexican supplies. Make pulled pork burgers, use for pizza toppings.
  8. COOKING TIMES The pork is finished cooking when it pulls apart easily and reaches an internal temperature of 100C. A 6 Kg piece of pork will take about 4 to 5 hours to cook at 140C and will serve 8.
