Pulled Jackfruit with Natasha and Darlene

Ingredients

  • 2 (365g) cans young green jackfruit, in brine or water (not in syrup!)
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 6 cloves garlic, minced
  • 1/4 cup vegetable broth or water (or vegetable stock)
  • 3/4 cup BBQ sauce

Method

  1. Add the olive oil to a large frying pan or skillet over medium-high heat, and when hot add the onions and garlic. Sauté until the onions are tender and beginning to brown, about 5 minutes. Set aside.
  2. Open the tins of Jack fruit, drain them and shred or chop a little. In a separate pan add a little oil and fry the jackfruit until softened. Add in the sauted onions and garlic, stir.
  3. Add the vegetable stock, stir again and then add in the BBQ sauce. Stir until warmed through.
  4. Serve in a slider or taco or wrap with your favourite salad ingredients!
