Prawn Chowder

Ingredients

  • 30 grams of butter
  • 1 carrot - peeled and cubed
  • 1 stem celery - cubed
  • 1 medium onion - diced
  • 2 medium potatoes - cubed
  • 1 tbsp of chopped fresh thyme
  • 3 tbsp plain flour
  • 300grams of Prawn
  • 2 cups of milk and 1 cup of water
  • Salt & Pepper
  • Croutons to garnish
  • Fresh parsley to garnish

Method

  1. Melt butter over medium heat in a large saucepan.
  2. Then add carrot, celery, onion, potatoes and thyme and sauté for 5 minutes, stirring frequently (keep-on stirring).
  3. Add the flour and continue cooking for another 3 minutes stirring frequently (keep- on stirring).
  4. Add the milk and 1 cup of water and bring to simmer for 5 minutes, stirring.
  5. Add the Prawns, salt and pepper and simmer for 10 minutes.
  6. Serve garnished with croutons and parsley.
