Prawn Chowder

Ingredients
- 30 grams of butter
- 1 carrot - peeled and cubed
- 1 stem celery - cubed
- 1 medium onion - diced
- 2 medium potatoes - cubed
- 1 tbsp of chopped fresh thyme
- 3 tbsp plain flour
- 300grams of Prawn
- 2 cups of milk and 1 cup of water
- Salt & Pepper
- Croutons to garnish
- Fresh parsley to garnish
Method
- Melt butter over medium heat in a large saucepan.
- Then add carrot, celery, onion, potatoes and thyme and sauté for 5 minutes, stirring frequently (keep-on stirring).
- Add the flour and continue cooking for another 3 minutes stirring frequently (keep- on stirring).
- Add the milk and 1 cup of water and bring to simmer for 5 minutes, stirring.
- Add the Prawns, salt and pepper and simmer for 10 minutes.
- Serve garnished with croutons and parsley.
