Polish Potato Salad with apple and peas (courtesy of Barbara)
Makes 1 big salad bowl
Ingredients
4 washed potatoes
2 carrots
1 parsnip
4 eggs
1 green apple
5 to 6 gherkins
1 onion
1 cup of frozen peas
¼ to ½ cup of mayonnaise
Salt and pepper
Method
Place the potatoes, carrots, parsnip and eggs in a pot half filled with water. Heat for 30 to 40 minutes until the vegetables are tender.
Let cool down and using a knife gently peel the vegetables.
Chop the onion, apple, carrots, potatoes, parsnip, boiled eggs and gherkins into small cubes.
Add the peas and mayo, pinch salt & pepper and stir all together.
VARIATION: This is a wonderful dish for a party, BBQ or a shared dinner. Keep the salad in the fridge. If, on the second day there is excess water, add a teaspoon of sugar to the salad and this will take the water up.
