Polish Potato Salad with apple and peas (courtesy of Barbara)

Makes 1 big salad bowl

Ingredients

  • 4 washed potatoes
  • 2 carrots
  • 1 parsnip
  • 4 eggs
  • 1 green apple
  • 5 to 6 gherkins
  • 1 onion
  • 1 cup of frozen peas
  • ¼ to ½ cup of mayonnaise
  • Salt and pepper

Method

  1. Place the potatoes, carrots, parsnip and eggs in a pot half filled with water. Heat for 30 to 40 minutes until the vegetables are tender.
  2. Let cool down and using a knife gently peel the vegetables.
  3. Chop the onion, apple, carrots, potatoes, parsnip, boiled eggs and gherkins into small cubes.
  4. Add the peas and mayo, pinch salt & pepper and stir all together.
  5. VARIATION: This is a wonderful dish for a party, BBQ or a shared dinner. Keep the salad in the fridge. If, on the second day there is excess water, add a teaspoon of sugar to the salad and this will take the water up.
