Pineapple Turmeric Cupcakes

Ingredients
- ½ cup of crushed drained pineapple
- ½ cup of sugar
- 80 grams butter
- ¼ cup of milk
- 1 egg
- 1 ½ cups of flour
- 1 tablespoon of baking powder
- 1 teaspoon of turmeric
- Icing
- 1 ½ cups of icing sugar
- 80g butter
- ¼ cup of crushed pineapple
- Coconut for topping.
Method
- Pre-heat the oven to 180 degrees
- Put the flour, baking powder, sugar and turmeric into a processor and mix briefly together.
- Add the butter and blend until the mixture looks like breadcrumbs. Add the egg, pineapple and milk. Mix until you have an even batter.
- Divide into 12 paper cup cake cases, filling 2/3 fill. Bake for 20 mins. Let cool completely before icing.
- Icing
- Beat together the icing sugar and butter until fluffy. Add the pineapple and mix until combined.
- Ice the cakes and sprinkle with coconut.
