Pineapple Turmeric Cupcakes

Makes 12

Ingredients

  • ½ cup of crushed drained pineapple
  • ½ cup of sugar
  • 80 grams butter
  • ¼ cup of milk
  • 1 egg
  • 1 ½ cups of flour
  • 1 tablespoon of baking powder
  • 1 teaspoon of turmeric
  • Icing
  • 1 ½ cups of icing sugar
  • 80g butter
  • ¼ cup of crushed pineapple
  • Coconut for topping.

Method

  1. Pre-heat the oven to 180 degrees
  2. Put the flour, baking powder, sugar and turmeric into a processor and mix briefly together.
  3. Add the butter and blend until the mixture looks like breadcrumbs. Add the egg, pineapple and milk. Mix until you have an even batter.
  4. Divide into 12 paper cup cake cases, filling 2/3 fill. Bake for 20 mins. Let cool completely before icing.
  5. Icing
  6. Beat together the icing sugar and butter until fluffy. Add the pineapple and mix until combined.
  7. Ice the cakes and sprinkle with coconut.
