Pineapple Pork Ribs with Winter Slaw
Serves 4 - 6
Ingredients
- 1 x 430g can pineapple chunks
- ¼ cup soy sauce
- 3 ½ tablespoons runny honey
- 1.3kg pork spare ribs (approximately 24 ribs), cut into individual ribs
- WINTER SLAW
- ¼ cup mayonnaise
- ¼ cup thick Greek yoghurt
- 1 teaspoon Dijon mustard
- Juice of 1 lemon
- 2 tablespoons finely chopped parsley, optional
- ¼ red cabbage, shredded
- 2 celery sticks or 1 large fennel bulb, grated or sliced
- 1 carrot, grated or sliced
Method
- Mix pineapple chunks and juice with soy sauce and honey. Place ribs in a roasting or casserole dish and pour over sauce to coat well.
- Bake in oven for 40 minutes until sauce is reduced and sticky. Baste pork ribs with sauce a couple of times during cooking.
- To make a winter slaw, mix together the mayonnaise, yogurt, mustard, lemon juice and parsley, and combine with the vegetables.
