Perfect Roast Potatoes

Serves 6-8

Ingredients

  • 1.5 kg of Agria potatoes or any other floury variety
  • 2 teaspoons of garlic
  • 30g butter
  • 2 tablespoons of finely chopped rosemary
  • 3 tablespoons of olive oil
  • Salt and pepper

Method

  1. Preheat oven to 200.
  2. Peel potatoes and place them in a large saucepan. Half fill with warm water and bring to the boil. Boil for 8 mins.
  3. Drain the water from the saucepan. Cover tightly with the lid and shake the saucepan firmly so that the edges of the semi cooked potatoes become smashed!
  4. Add the butter garlic and chopped rosemary to the potatoes and mix gently with a spoon.
  5. Place the potatoes into a roasting pan and drizzle with the olive oil. Season with salt and pepper.
  6. Roast for 45 minutes to 1 hour until golden and crispy.
  7. The best potatoes to roast are the ones that are floury.
  8. Agria, Red Rascal and Liam Hardy are all good for roasting
