Orange Cake
Makes 1 21cm cake or 2 small loaf cakes.
Ingredients
- 125g butter, softened
- 1 cup sugar
- 2 eggs
- 1 orange (unpeeled)
- 1 tsp baking soda
- ½ cup warm water
- 2 c flour
- 1 tsp vanilla
- 1 cup of sultanas
Method
- Pre-heat oven to 160c. Grease and line your cake tin. A 20cm round tin or 2 small loaf tins.
- Cut the orange into quarters and remove the seeds. Whizz in a food processor until finely chopped.
- Dissolve the baking soda in the warm water and add to the food processor.
- Add the butter, sugar, eggs, vanilla and flour. Whizz to combine.
- Add the sultanas and mix through with a spoon.
- Pour cake batter into tin or tins. Bake for about 1 hour if making one cake or 40 mins if making 2 cakes.
- This cake doesnt need icing but you can ice the cake using your favourite icing to add extra sweetness if you like.
