Orange Cake

Makes 1 21cm cake or 2 small loaf cakes.

Ingredients

  • 125g butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 orange (unpeeled)
  • 1 tsp baking soda
  • ½ cup warm water
  • 2 c flour
  • 1 tsp vanilla
  • 1 cup of sultanas

Method

  1. Pre-heat oven to 160c. Grease and line your cake tin. A 20cm round tin or 2 small loaf tins.
  2. Cut the orange into quarters and remove the seeds. Whizz in a food processor until finely chopped.
  3. Dissolve the baking soda in the warm water and add to the food processor.
  4. Add the butter, sugar, eggs, vanilla and flour. Whizz to combine.
  5. Add the sultanas and mix through with a spoon.
  6. Pour cake batter into tin or tins. Bake for about 1 hour if making one cake or 40 mins if making 2 cakes.
  7. This cake doesnt need icing but you can ice the cake using your favourite icing to add extra sweetness if you like.
