One-Pan Mexican Quinoa

Easy:no cutting boards or chopping. Just pour all together in one pan for 20 mins. Suitable for vegetarians.

Ingredients

  • 2 cups water
  • 1 cup quinoa
  • 1 can diced tomatoes with basil
  • 1 can black beans (drained and rinsed)
  • 1 can corn (drained) or frozen corn
  • 1 teaspoon chilli (optional)
  • 1 teaspoon of garlic (optional)
  • corriander

Method

  1. Put the quinoa and water in a microwave safe bowl. Cook on HIGH for 10-15 mins then stir. Cook a further 2 minutes. Make sure the water has gone and is absorbed. Stand down to cool.
  2. Place the cooked quinoa into a frying pan. Add the drained corn and black beans and tomatoes. Add the garlic, corriander and chilli (if using). Mix together.
  3. Mix for 10 mins and ready to be served.
  4. VARIATIONS: red onion, avocado, lime and any herbs
