No Bake Chocolate Chippie Log

This recipe serves 4


Ingredients

  • 1 and 1/2 Packet of Chocolate Chip Biscuits (about 20 biscuits)
  • 300 mls of Cream
  • 1 teaspoon essence (Vanilla or peppermint or almond or coconut)
  • 1 tablespoon Icing Sugar
  • 1 tablespoon Vanilla Instant Pudding (optional)
  • 1 cup of liquid for Dunking…Brandy, Kahlua, lemonade, orange juice

Method

  1. In a large bowl beat the cream with electric beaters until soft peaks are formed. Add the icing sugar, essence and instant pudding mix. Continue to beat until all mixed together.
  2. Prepare your dunking liquid in a shallow bowl.
  3. Smear some cream across the serving plate as this helps hold the biscuits in place and forms a base. Take the first biscuit and dunk it quickly in the chosen liquid, then smear one side with cream and place it vertically on the plate - the first one may fall but the second will hold it up.
  4. Take the second biscuit and repeat and place it up against the first biscuit. Repeat until all the biscuits are used up and form a straight line.
  5. Take the remaining cream and gently smear all over the top and sides of the log, smoothing as best you can.
  6. Chill the log for at least 6 hours, preferably overnight, to allow the biscuits to soften before serving. Serve covered with your choice of fresh berries, chocolate chips or grated chocolate.
