Maori Steamed Pudding (courtesy of Sally Anne Hona)

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 3 teaspoons baking powder
  • 200g butter
  • 1 cup milk
  • 3 eggs
  • 1 teaspoon baking soda dissolved in 1/4 cup of hot milk
  • 6 tablespoons golden syrup

Method

  1. 1. Mix flour, sugar and baking powder in a large bowl.
  2. 2. Rub in the butter until the mixture looks like crumbs.
  3. 3. Make a well and add the cold milk, eggs, baking soda dissolved in the hot milk and golden syrup. Fold until the mixture is well combined and smooth.
  4. 4. Grease empty tins or a steamed pudding bowl. Fill the tins halfway with the mixture and cover with foil. Tie with string to capture the steam.
  5. 5. Put in a water bath (baking tray with water halfway up the tray) Cook for about 1 hr 30 mins at 180°C. If you put all the mixture into a pudding bowl, then it will take 2 to 3 hours to cook.
  6. 6. Check your pudding with a toothpick to see if the centre is done. Enjoy with Cream and Custard or ice cream!
  7. Note: Remember to watch the water levels in the oven. If the water level is down, please fill it back up to half way.
