Paraoa Parai (Maori bread)
Makes about 12 pieces
Ingredients
- 2 cups of self-rising flour
- 1 teaspoon of salt
- 1 cup of warm water
- About 250ml of canola oil
Method
- Put the flour into a large bowl.
- Add the salt and stir together. Make a well in the centre and add the warm water. Mix well to make a dough.
- Flour the bench well. Knead and add sprinkled flour for about 2 mins. Pat to flatten the dough then cut into pieces using a knife.
- Heat the oil in a frying pan until it is very warm but not smoking, put 3-4 pieces into the oil, be careful not to overcrowd.
- Cook for about 2 minutes on each side. The bread will be lovely and brown and rise.
- VARIATIONS: Maori Fried Bread (Paraoa Parai) can be eaten with sweet jams and honey or salad and meat fillings.
- Maori bread is traditionally served at Hangi, parties and buffets.
