Maori Fish with Coconut Cream (courtesy of Joanne Klaver) Maori ika me kokonati kirimi (Maori translation)
Serves 6 for entrée
Ingredients
- 300g fillet fish (NZ Hoki) (pick any fish optional)
- ½ to 1 can of coconut cream
- 8 cherry tomatoes or 2 tomatoes
- 3 tablespoon of lemon juice
- 1 red onion, very finely chopped
- 2-3 spring onion, finely chopped
- pinch salt & pepper
Method
- Cut fresh fish into small pieces and place in a bowl.
- Add chopped tomatoes, onions in a bowl with fish.
- Place in a bowl with add lemon juice & coconut cream to cover, and mix well.
- Can eat straight away or leave in fridge overnight when you like the texture slightly firmer.
- VARIATIONS: can swap to lime juice, coriander, cucumber.
- Maori fish with Coconut Cream is traditionally served at Hangi, parties and buffets and can be eaten with Paraoa Parai (Maori fried bread).
