Serves 6 for entrée

Ingredients

  • 300g fillet fish (NZ Hoki) (pick any fish optional)
  • ½ to 1 can of coconut cream
  • 8 cherry tomatoes or 2 tomatoes
  • 3 tablespoon of lemon juice
  • 1 red onion, very finely chopped
  • 2-3 spring onion, finely chopped
  • pinch salt & pepper

Method

  1. Cut fresh fish into small pieces and place in a bowl.
  2. Add chopped tomatoes, onions in a bowl with fish.
  3. Place in a bowl with add lemon juice & coconut cream to cover, and mix well.
  4. Can eat straight away or leave in fridge overnight when you like the texture slightly firmer.
  5. VARIATIONS: can swap to lime juice, coriander, cucumber.
  6. Maori fish with Coconut Cream is traditionally served at Hangi, parties and buffets and can be eaten with Paraoa Parai (Maori fried bread).
