Malva Pudding (Courtesy of Kerry Edwards)

Ingredients

  • Pudding Ingredients
  • 1/2 Cup Sugar
  • 1 Egg
  • 1 Cup Flour
  • 1 Tsp Baking Powder
  • 1 Tbsp Apricot Jam
  • 1 Tsp Baking Soda
  • 1 Cup Milk
  • 1 1/2 Tsp White Vinegar
  • 1 Tsp Vanilla Essence
  • Sauce Ingredients
  • 3/4 Cup Sugar
  • 1/4 Cup Milk
  • 1/4 Cup Amarula Liquor
  • 1/2 Cup Water
  • 125 Grams Butter (diced)

Method

  1. Pudding Method
  2. Preheat the oven 180oC
  3. In mixing bowl, sugar and egg mix well, till smooth
  4. Add rest of ingredients, mix until smooth
  5. Grease 20x20cm Oven Proof Dish
  6. Pour mixture
  7. Bake for 40 minutes, till stewer stick come out clean (nice and brown)
  8. Prick the pudding with lots of holes (for sauce to go in).
  9. Sauce Method
  10. All ingredients in a small pot.
  11. Slow Cook Sauce till sugar melt.
  12. Boil for one minute.
  13. Pour over a sppon onto hot pudding.
  14. Make sure the pudding is well covered with sauce.
  15. Let it soak for 5-10 minutes.
  16. Serve hot with custard or whipped cream
