Left over Chimichangas “chi·mee·chang·guh”

Makes 6



Ingredients

  • 6 flour tortillas
  • 1 tin of chopped tomatoes
  • 1 white onion, finely chopped
  • A bunch of coriander
  • Juice of 1 lime
  • 1 tin of Black Beans
  • 2 cups of grated cheese (mozzarella is the best)
  • Your favourite chilli sauce
  • ANY LEFT OVERS IN YOUR FRIDGE!

Method

  1. Pre-heat the oven to 180 Celsius.
  2. Mix the tomatoes, chopped onion, coriander and lime together in a bowl. This is your salsa.
  3. Sprinkle a little grated cheese on one of the ends of the tortilla. Sprinkle a ¼ of a cup of black beans on top. Add your favourite chilli sauce.
  4. NOW ITS TIME TO ADD ANY OTHER INGREDIENTS YOU LIKE. (about ½ cup)
  5. Fold the tortilla over the mixture and then fold in the sides. Continue rolling up so that the ingredients are locked in.
  6. Place the chimichangas on a greased oven tray. Spray the top with oil and bake until crispy. About 15 to 20 mins. Serve with sour cream, guacamole, and the salsa.
  7. For vegetarian chimichangas add corn and mushrooms.
  8. Try any flavours that you love! You can also make sweet dessert chimichangas, peanut butter and banana!
