Ingredients

  • 1/2 cup medium grain rice
  • 4 1/2 cups water or coconut water
  • 3 Tbsp cocoa, or finely grated Koko Samoa
  • 3 Tbsp sugar
  • 425ml coconut cream (1 can)

Method

  1. 1. Put rice, water (coconut water), Cocoa (or Koko) sugar in a medium pot.
  2. 2. Bring to a boil, turn down until just little bubbles (simmer). Stir so the mixture does not stick to the bottom of the pot.
  3. 3. Cook slowly until the rice is cooked and covered in creamy chocolate sauce about 30-40 minutes.
  4. 4. Remove from heat and stir in the coconut cream.
  5. VARIATIONS
  6. Use brown rice in your Koko Samoa and you will get a bitter-sweet taste. But cooking may be longer and need more water.
