How long to cook: 30-45 mins
Ingredients
- 1/2 cup medium grain rice
- 4 1/2 cups water or coconut water
- 3 Tbsp cocoa, or finely grated Koko Samoa
- 3 Tbsp sugar
- 425ml coconut cream (1 can)
Method
- 1. Put rice, water (coconut water), Cocoa (or Koko) sugar in a medium pot.
- 2. Bring to a boil, turn down until just little bubbles (simmer). Stir so the mixture does not stick to the bottom of the pot.
- 3. Cook slowly until the rice is cooked and covered in creamy chocolate sauce about 30-40 minutes.
- 4. Remove from heat and stir in the coconut cream.
- VARIATIONS
- Use brown rice in your Koko Samoa and you will get a bitter-sweet taste. But cooking may be longer and need more water.
