Will ice one large cake

Ingredients

  • 500g of almond flavoured ready to roll icing
  • 500g of white fondant icing
  • ¼ cup of apricot jam
  • Food colouring (optional)
  • Ribbons (optional)

Method

  1. Trim your cake so that it stands straight.
  2. Knead the marzipan icing until it is soft and can be rolled out on a board. (sprinkle with icing sugar so the marzipan won’t stick.)
  3. Heat the apricot jam in the microwave so that it is warm and easy to spread. Brush the warm jam all over the cake.
  4. Gently put your almond icing (marzipan) onto the cake and press down gently all over with your hands. Cut off the excess and smooth.
  5. Repeat the process with the fondant (white) icing.
  6. The cake can have extra decorations using stamps, cutters or modelling your own shapes. Use different coloured fondant icing by mixing small amounts with food colouring and kneading until the colour is just right!
  7. Put a matching ribbon around the cake to make it look more special for Christmas day!
