Ham Egg and Cheese Bread Bowls

Super easy lunch and a great way to use leftovers.

Makes 4

Ingredients

  • • 4 bread rolls - soft or crusty
  • • 4 slices of ham
  • • 4 eggs
  • • ½ cup of grated mozzarella or any combinations of cheese
  • • Fresh herbs of your choice

Method

  1. Preheat the oven to 180 Celsius.
  2. Cut the tops off the bread rolls and put aside. Scoop out the centre of the roll. (you can use this for breadcrumbs or croutons)
  3. Line the bread roll with a layer of the ham. (Try to use one piece so there is less chance the egg will leak out)
  4. Crack in the egg and top with 2 tablespoons of cheese. Sprinkle with herbs.
  5. Put the top back on the roll and wrap in tin foil and place into the oven for 20 to 25 mins. Have a look at 20 mins and if the yolk is too runny for you then put them back into the oven for another 5 mins or so.
  6. Remove from the oven, unwrap, and serve immediately!
