Heat butter, golden syrup and brown sugar in the microwave on high for 1 min or until butter is melted. Stir to combine.
Sift flour, cinnamon, ginger, baking soda into a bowl. Stir in the butter mixture, egg and vanilla essence. Press together to form a dough. Cover with plastic wrap and chill for 20 mins.
Knead on a floured surface. Roll out to 5mm and cut into shapes.
Place onto prepared trays and bake for 10 mins. Cool on wire rack.
