Galette des Rois (Cake of Kings)

(Tradtional French cake served after Christmas to celebrate Epiphany)

Makes 1 cake

Ingredients

  • 2 sheets of ready-made puff pastry
  • 100g softened butter
  • 100g caster sugar
  • 1 egg
  • 100g of ground almonds
  • 2 tablespoons of rum or rum essence
  • 2 heaped tablespoons of apricot jam
  • 1 lightly beaten egg for glazing
  • 1 ceramic token

Method

  1. Preheat oven to 200c and line 1 baking tray with baking paper.
  2. Cut a 22cm circle from each sheet of pastry. Place one on the lined baking tray and spread with the jame, leaving 2cm around the edge.
  3. Beat together the softened butter and caster sugar until light and fluffy, then beat in the egg. Stir in the ground almonds and rum.
  4. Spoon the mixture over the jam, spreading it evenly. Hide the token into the mixture. Brush the edges of the pastry with water, then cover with the second piece of pastry, pressing the edges to seal. Mark the top of the pastry from the centre to the edges like the spokes of a wheel or in a zig zag pattern, then brush with beaten egg.
  5. Bake for 25-30 mins until crisp and golden. Serve warm or cold.
  6. **Make sure you tell everyone there is a token hidden in the cake! The lucky person who gests served the token will be King or Queen for the day!
