Deaf Diversity around the Kitchen Table with Gaby Evans

Ingredients

  • 1 cup (110g) almond meal
  • 1 2/3 cups (250g) icing sugar
  • 1/2 cup (75g) plain flour
  • 1/4 cup (30g) cocoa powder
  • 1/2 teaspoon baking powder
  • 5 whole eggs
  • 200g butter, melted (or at room temperature)

Method

  1. 1. Preheat the oven to 160oC. Place the almond meal, icing sugar, flour, cocoa and baking powder into a bowl and stir to combine.
  2. 2. Add the whole eggs and stir to combine.
  3. 3. Add the butter and stir to combine.
  4. 4. Grease friand or muffin tins. Spoon the mixture into the tins and bake for 15-20 minutes or until spongy to the touch.
  5. 5. Make approximately 12 friands.
