Frozen Chocolate Banana Yoghurt Clusters

Makes 12 large clusters


Ingredients

  • • 3-4 cups ripe but firm banana slices about 3 large bananas
  • • 1 cup plain Greek yoghurt
  • • 1-2 tablespoons honey
  • • 1 teaspoon of vanilla
  • • 250g semi-sweet or dark chocolate, chopped
  • • 1 tablespoon coconut oil

Method

  1. Line a cupcake mould with paper cup liners.
  2. In a bowl, mix the yogurt with the honey and vanilla. Add the banana slices and gently toss to coat. Scoop a small spoonful (3 to 4- banana slices) and place in the paper liners. Freeze overnight.
  3. Melt the chocolate and coconut oil together in a bowl in the microwave. Dip each frozen cluster in the chocolate and place on baking paper lined tray. Sprinkle with sea salt or hundreds and thousands. (if desired). Freeze until completely frozen or eat straight away!
  4. Any combination of fruits could be used Different flavours like maple syrup or peanut butter could be added.​
