Ingredients
- ¼ cup plus 2 tablespoons of sugar
- 1 whole egg
- 1 egg yolk
- ¾ cup whole milk
- 1/4 teaspoon Vanilla
Method
- Pre-heat the oven to 180 degrees
- Cook ¼ cup of sugar over medium heat in a heavy medium pot. Holding the handle, swirl the pot around until the sugar has melted and golden.
- Immediately pour the hot caramel into 2 ramekins and swirl to coat the bottom.
- Whisk the egg and sugar then add the milk and vanilla. Whisk together.
- Pour over the caramel. Put the ramekins in a baking tin half filled with water and bake for 25 to 30 mins.
- Chill for 30 mins or longer and turn out onto a plate.
