Flan Caramel

Ingredients

  • ¼ cup plus 2 tablespoons of sugar
  • 1 whole egg
  • 1 egg yolk
  • ¾ cup whole milk
  • 1/4 teaspoon Vanilla

Method

  1. Pre-heat the oven to 180 degrees
  2. Cook ¼ cup of sugar over medium heat in a heavy medium pot. Holding the handle, swirl the pot around until the sugar has melted and golden.
  3. Immediately pour the hot caramel into 2 ramekins and swirl to coat the bottom.
  4. Whisk the egg and sugar then add the milk and vanilla. Whisk together.
  5. Pour over the caramel. Put the ramekins in a baking tin half filled with water and bake for 25 to 30 mins.
  6. Chill for 30 mins or longer and turn out onto a plate.
