Flaky Pesto Chicken Parcels

Serves 4

Ingredients

  • 4 sheets of flaky puff pastry
  • 2 chicken breast
  • 4 teaspoons green basil pesto
  • Cherry tomatoes and green beans to serve

Method

  1. Preheat the oven to 220c
  2. Cut the chicken breasts in half then cut each half horizontally.
  3. Put the pesto onto the chicken and place the top back on.
  4. Wrap each Chicken piece in flaky pastry.
  5. Brush with a little olive oil.
  6. Cook for 20 minutes until pastry is golden and make sure the chicken is cooked well.
  7. Serve with cherry tomatoes and green beans for a delicious meal.
  8. VARIATIONS: mustard or pate inside the chicken parcel and any add salads or vegetables on the side.
