Flaky Pesto Chicken Parcels
Serves 4
Ingredients
- 4 sheets of flaky puff pastry
- 2 chicken breast
- 4 teaspoons green basil pesto
- Cherry tomatoes and green beans to serve
Method
- Preheat the oven to 220c
- Cut the chicken breasts in half then cut each half horizontally.
- Put the pesto onto the chicken and place the top back on.
- Wrap each Chicken piece in flaky pastry.
- Brush with a little olive oil.
- Cook for 20 minutes until pastry is golden and make sure the chicken is cooked well.
- Serve with cherry tomatoes and green beans for a delicious meal.
- VARIATIONS: mustard or pate inside the chicken parcel and any add salads or vegetables on the side.
